In this method, liquid nitrogen and liquid carbon dioxide are stored at very low temperatures up to -200°C and applied to products for the purpose of fast and effective cooling in small spaces. This method is particularly used for meat and seafood, and provides a freezing process 4 times faster than mechanical cooling.
